Send me Recipes!!!

I need recipes! I haven't been cooking much lately...maybe a little longer than that. The kids and I aren't eating well, and I really don't want to get them stuck on bad habits at their young age. So, here's your challenge: send me your favorite recipes or your old stand-by recipes. I'm really going to make an effort to start cooking several dishes on the weekends and freezing them to eat during the week. One of my friends does once-a-month cooking, so I'm trying to ease myself into that for my little family of 3. Now...flood me with comments with your faves!

Gosh, I don't cook. :-) When I do, I make brown rice and fry it up with seasoning salt, cayenne pepper, butter, onions, banana peppers, and top it off with green onions.

I used to fry little pieces of chicken breast and tons of garlic in a skillet, add broccoli, and serve over fettuccine noodles.

If we cook, we usually do something frozen from Trader Joe's. Or we fry potatoes.

We don't do the whole cooking thing well. Although DH makes some killer fish on the grill. YUM

Oh ... wait ... have you tried some crockpot recipes? Those freeze really well!

I actually did a crockpot recipe tonight. I had some 4-cheese rice-a-roni rice and I put that and a couple of chicken breasts in the crockpot for dinner tomorrow. I've never really cooked much, but I can't keep feeding the boys Happy meals and crap like that.

I don't cook either and I know I should... Aryn is getting too big and I am having a hard time finding healthy food for her to! LOL
Anyways here is something simple that would be good for lunches or snacks... Something my grandma showed me how to make and I love it.
Egg Tuna Sandwiches.
1-boil 6 eggs
2-mix together 2 cans of tuna and mayo
3-peel the eggs when they are done and cut them up into small peices
4-mix together with tuna
Now I also put in a little pickle juice, salt, pepper, and paprika.
It doesn't take very long to make and its a good source of protein.

Hi Conley:

I used to think my kids wouldn't eat fish--which is the EASIEST thing to cook and so healthy. But salmon is gobbled up around here. I buy a nice piece, put it in a glass baking pan, smother it with a honey glaze (honey and Dijon mustard) and put a little water in the bottom of the pan. Ten minutes later, voila. I also got (from significant other) the Rolls Royce of rice steamers. It is SO easy. I put one cup of rice with two cups of water in it--don't even have to stir. I close it. Press white rice or brown rice. It beeps when done. If you kids like rice with butter or even some veggies or whatever, it couldn't be easier and frees YOU up to do just the main dish.

I also make shrimp scampi--another totally easy dish. Kids love it--olive oil in pan, chopped garlic, a chili pepper (the borwn dried-up kind) chopped fine, parsley chopped, simmer . . . add DEVEINED, pre-peeled UNCOOKED shrimp (forzen, pull tails off first, let defrost in sink in a strainer for a bit or that day in fridge) . . . five minutes later, they're pink. I serve over rice . . . and get French bread for them to dip in the leftover garlic/olive oils sauce.

Alyse, I'm not wild about tuna, but I make something like that with chicken instead of tuna.

Erica, I'm going to have to try the salmon and shrimp scampi. I know my kids will eat battered shrimp, so they'd probably eat the scampi too. They also like tilapia, so maybe they'd eat the salmon too.

Hi Conley. I'm a visiting blogger mom (www.robinaltman.wordpress.com). I'm a major fan of the crockpot. For lemon chicken, put a whole chicken in. Pour a bit of olive oil over each quarter. Then squeeze lemon over each quarter. Sprinkle the whole thing with lemon pepper, and cook it on low for 6 - 8 hours. Yum.
